Claudia and Ted co-founded Pastificio Boulder in 2018, out of the desire of playing a role in changing the current food system in America. Pastificio Boulder is a craft pasta company, creating amazingly flavorful and nutritious fresh pastas from 100% whole grain flour which is milled fresh and in-house daily from organic, heritage wheats and other specialty grains.
Claudia grew up in a very Italian family in Sao Paulo, Brazil. Food has always played a deeply meaningful role in her life as a means of nurturing tradition and also and especially as a way of connecting and sharing life with family and friends. “Food brings people together.” She first learned the art of pasta making as a child, with her Italian grandparents. And later through professional classes at the International Culinary Center in New York and at the Laboratorio Sfoglia e Pasta Fresca in Bologna, Italy.
Ted co-founded one of the first brewpub restaurants in Connecticut in 1995. The dedication to a “craft” beer product of the utmost natural purity, depth of flavor and freshness was the very same motivation which today drives his desire to “craft” fresh artisanal pastas.
We are a small business, based in Boulder CO, and run by two people that are passionate about REAL food. We believe in the power of artisanal, organically and sustainably grown local food bringing communities together.
